We develop research projects founded by public institutions (Galician and Spanish governments, European Union, etc.) as well collaborative contracts with private seafood industry. Current on-going projects are the following:

Objectives: Analyse the convenience of consuming fish and marine oils during aging, with a special stress on neuroinflammation and consequently, on related neurological and neurodegenerative disorders


A PLANT PILOT START FOR THE TRANSFORMATION AND ELABORATION OF NEW PRODUCTS RESULTING FROM THE TRANSFORMATION OF CULMÁREX GOLDEN SEA BASS AND SEA BASS AND LABELLING PLANS for NEW PODUCTS

CHARACTERISATION AND ASSESSMENT of the OXIDATIVE DEGREE OF AN OIL OBTAINED FROM TUNA HEADS

STABILITY ASSESMENT OF A TUNA HEADS OIL STORED AT TWO DIFFERENT TEMPERATURES IN THE PRESENCE OF A NATURAL ANTIOXIDANT

OXIDATIVE MECHANISMS INVOLVED IN THE QUALITY AND BIOACTIVITY OF FISHERY PRODUCTS

EMPlOYMENT OF THE HIGH-PRESSURE TECHNOLOGY FOR THE QUALITY ENHANCEMENT OF FROZEN HAKE

Objectives: Inhibition of the main degradation mechanisms, and consequently, quality enhancement of frozen hake by optimised employment of a previous high-pressure treatment.

DEVELOPMENT OF METHODOLOGIES FOR THE IDENTIFICATION AND QUANTIFICATION OF METABOLITES RESULTING FROM IN-VIVO OXIDATION OF OMEGA-3 FATTY ACIDS IN TISSUES AND RELATIONSHIP WITH THE OXIDATIVE STRESS

Objectives: Development of an analytical based on solid phase extraction and tandem liquid chromatography coupled to mass spectrometry for the identification and quantification of in-vivo peroxidation products resulting from PUFA n-3 y n-6 (EPA, DHA and ARA) in tissues.


ADVANCED PROTEOMIC AND SYSTEMS BIOLOGY FOR STUDYING THE FOOD ALERGIA
